Hearty Sausage Rice Skillet with Roasted Brussels Sprouts and Red Onion

- 2 sausages, cut into bite-sized pieces
- 1/2 cup long-grain white rice
- 1 cup Brussels sprouts, halved
- 1/2 large red onion, thinly sliced
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon dried thyme
- Salt and black pepper to taste
- Fresh parsley for garnish

Preheat the oven to 400°F (200°C).

In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. Brown the sausage pieces until cooked through. Remove from the skillet and set aside.

In the same skillet, add the remaining olive oil and sauté the sliced red onion until caramelized and slightly golden.

Add the Brussels sprouts, sprinkle with garlic powder, paprika, dried thyme, salt, and black pepper. Toss to coat the vegetables evenly with the spices and oil.

Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the Brussels sprouts are tender and lightly browned.

Meanwhile, cook the rice according to the package instructions.

Once the Brussels sprouts are done, remove the skillet from the oven and stir in the cooked sausage and rice. Adjust seasonings if needed.
