Satisfying Vegetable and Shrimp Stir-Fry Noodles

- 8 oz rice noodles
- 8 oz shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, thinly sliced
- 2 cups mixed vegetables (such as corn, peas, etc.)
- 3 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 tablespoon green onions, chopped
- Salt and pepper to taste

Cook the rice noodles according to package instructions. Drain and set aside.

Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and sauté until fragrant.

Add shrimp and cook until pink and cooked through. Remove from skillet and set aside.

In the same skillet, add onion, carrots, and mixed vegetables. Stir-fry for a few minutes until the vegetables are crisp-tender.

Push the vegetables to one side of the skillet and add the cooked noodles to the other side.

Pour soy sauce and olive oil over the noodles. Toss everything together until well-coated.

Add the cooked shrimp back to the skillet, season with salt and pepper, and toss gently to combine.

Cook for another 2-3 minutes until everything is heated through.

Garnish with chopped green onions and serve hot.
