Tangy Lime and Shrimp Stir-Fry

- 1 lb shrimp, peeled and deveined
- 1 cup Chicharrón with meat and fat attached
- 1 lime, zest and juice
- 1 onion, thinly sliced
- 1 cup Cheetos
- 1 cup Pepper jack cheese, grated
- 1/4 cup sour cream
- 1/4 cup cottage cheese
- 2 tbsp soy sauce
- 2 tbsp beef tallow (for frying)
- Salt and pepper to taste

In a large skillet, heat beef tallow over medium heat.

Add the shrimp and Chicharrón to the skillet, cooking until the meat is crispy and golden brown.

Remove the shrimp and Chicharrón from the skillet and set aside.

In the same skillet, add the sliced onion and cook until softened and slightly caramelized.

Return the shrimp and Chicharrón to the skillet, stirring in the lime zest and juice.

Add the soy sauce and season with salt and pepper to taste.
