Savory Somali Beef Pilaf

This Somali-inspired beef pilaf is a fragrant and hearty dish, featuring tender pieces of marinated beef cooked with a medley of spices and long-grain rice. - 2 cups basmati rice
- 1 lb beef stew meat, cubed
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tsp cumin
- 1 tsp coriander
- ½ tsp cinnamon
- ½ tsp turmeric
- ¼ tsp black pepper
- 1 tsp salt (to taste)
- ¼ cup raisins
- ¼ cup almonds or cashews, chopped
- 4 cups beef broth
- 2 tbsp vegetable oil
- Fresh cilantro, for garnish

Rinse the basmati rice under cold water until the water runs clear, then soak for 30 minutes. Drain.

In a large bowl, combine the beef cubes, minced garlic, ginger, cumin, coriander, cinnamon, turmeric, black pepper, and salt. Mix well and marinate for at least 1 hour, preferably overnight.

Heat vegetable oil in a large pot over medium heat. Add the sliced onions and sauté until golden brown and caramelized.

Add the marinated beef to the pot and cook until browned on all sides, about 5-7 minutes.

Pour in the beef broth, bring to a simmer, cover, and cook for about 40 minutes or until the beef is tender.

Stir in the soaked rice, raisins, and chopped nuts. Adjust seasoning if needed. Add more broth if it’s too dry. Cover and simmer for an additional 20-25 minutes, or until the rice is cooked through.
