ingredients
- 1.5 pounds chicken breast, cut into 1-inch cubes
- ½ cup soy sauce
- ¼ cup brown sugar
- ¼ cup mirin (sweet rice wine)
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- ½ teaspoon black pepper
- 1 tablespoon cornstarch (optional, for thickening)
- 12 wooden skewers, soaked in water for 30 minutes
- Chopped green onions, for garnish
- Sesame seeds, for garnish
steps
- 1.
In a medium bowl, whisk together soy sauce, brown sugar, mirin, rice vinegar, sesame oil, garlic, ginger, and black pepper until well combined.
- 2.
If a thicker sauce is desired, dissolve cornstarch in a bit of water and stir it into the marinade.
- 3.
Reserve ⅓ of the marinade for brushing during grilling, and pour the remaining marinade over the chicken in a large zip-top bag.
- 4.
Seal the bag and place it in the refrigerator to marinate for at least 1 hour, or up to overnight for fuller flavor.
- 5.
Preheat your grill to medium-high heat.
- 6.
Thread marinated chicken pieces onto the soaked skewers, ensuring they are evenly spaced.
- 7.
Grill the skewers for about 10-12 minutes, turning occasionally and brushing with reserved marinade, until the chicken is cooked through and has nice grill marks.
- 8.
Remove from the grill and let rest for a few minutes.
- 9.
Garnish with chopped green onions and sesame seeds before serving.
