- 1 pack Good grains red and white quinoa rice (microwavable)
- 1 tin chickpeas, drained and rinsed
- 1 can coconut milk
- 1 jar grilled peppers, drained
- 2 tbsp olive oil
- 1 tsp garlic granules
- 1 tsp smoked paprika
- 1 tsp mixed herbs
- 1 tsp cumin
- 1 tsp sea salt
- 1 tsp black pepper
- Fresh lime (for garnish)

Cook the udon noodles according to package instructions. Drain and set aside.
