Hearty Potato Sausage Skillet Bake

- 1 cup Jiffy baking mix
- 2 cups diced potatoes (about 2 medium)
- 1 cup cooked sausage (crumbled)
- 1/2 cup cream cheese (softened)
- 1/2 cup sour cream
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 onion (finely chopped)
- 2 cloves garlic (minced)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil

In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent.

Stir in minced garlic and cook for another minute until fragrant.

Add the diced potatoes to the skillet, season with salt and pepper, and cook until tender, about 10-15 minutes, stirring occasionally.

In a large bowl, combine cooked sausage, softened cream cheese, sour cream, and shredded cheese. Mix until well combined.

Add Jiffy baking mix to the potato and sausage mixture, stirring until just combined.
