Spicy Veggie Cheesy Beef and Rice Skillet

- 1 lb ground beef
- 1 onion, diced
- 3 garlic cloves, minced
- 1 cup long grain rice
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1 bell pepper, diced
- 2 carrots, sliced
- 1 zucchini, dicedOptional toppings: chopped parsley, sliced green onions

In a large skillet, brown the ground beef over medium heat until fully cooked. Remove any excess grease.

Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion becomes translucent.

Stir in the long grain rice, chili powder, cumin, and paprika. Cook for an additional minute, allowing the rice to lightly toast.

Pour in the beef broth. Season with salt and pepper to taste. Bring to a boil.

Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is fully cooked and has absorbed the liquid.

Add the diced bell pepper, sliced carrots, and diced zucchini. Cook for another 5 minutes until the vegetables are tender.

Once the rice and veggies are cooked, sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet for a few minutes until the cheese is melted and gooey.

Remove from heat and garnish with optional chopped parsley or sliced green onions. Serve hot and enjoy!
