ingredients
- 1 lb boneless, skinless chicken thighs
- 2 tbsp olive oil
- 2 tsp ground cumin
- 2 tsp ground paprika
- 1 tsp ground turmeric
- 1 tsp garlic powder
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper (optional)
- Salt and pepper, to taste
- 4 large flour tortillas
- 2 cups shredded mozzarella cheese
- 1 cup shredded lettuce
- 1 medium tomato, diced
- 1/2 cup garlic sauce (store-bought or homemade)
steps
- 1.
In a bowl, combine olive oil, cumin, paprika, turmeric, garlic powder, coriander, cayenne, salt, and pepper. Add chicken thighs and coat evenly. Marinate for at least 30 minutes.
- 2.
Grill the marinated chicken over medium heat for 6-8 minutes per side until fully cooked and juices run clear. Let it rest for a few minutes before slicing into strips.
- 3.
Heat a large skillet over medium heat. Place one tortilla in the skillet, sprinkle half of the cheese evenly over the tortilla, and layer half of the grilled chicken, lettuce, and tomatoes on top.
- 4.
Add the remaining cheese and top with a second tortilla. Cook until the bottom is golden and crispy, about 3-4 minutes. Flip carefully and cook the other side until browned and the cheese is melted.
- 5.
Remove the quesadilla from the skillet and cut into wedges. Drizzle with garlic sauce before serving.
