Shiitake Mushroom Rice Paper Rolls

These refreshing, nutrient-packed rice paper rolls are stuffed with vermicelli, carrots, onions, and umami-rich shiitake mushrooms for an Asian-inspired appetizer or light meal.

- 8 rice paper wrappers
- 1 package (8 oz) vermicelli noodles
- 1 cup sliced shiitake mushrooms
- 1 cup julienned carrots
- ½ cup sliced green onions
- ½ cup sliced onions
- 1 tbsp soup powder
- 1 tsp black pepper
- 1 tbsp fried oil
- 1 cup peeled flour (main noodles)

Cook vermicelli noodles according to package instructions, rinse under cold water, and drain

Sauté shiitake mushrooms, carrots, onions, and green onions in fried oil until softened

Add soup powder and black pepper to the sautéed vegetables and mix well

Soak a rice paper wrapper in warm water until soft and pliable, then place on a flat surface

Add a small amount of vermicelli noodles and a spoonful of the sautéed vegetable mix to the center of the rice paper wrapper
- 6.
Roll up the bottom edge of the wrapper over the filling, then fold in the sides and continue to roll until the wrapper is completely sealed

Repeat with remaining wrappers and filling
