ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 2 teaspoons garlic powder
- Salt and pepper to taste
- 1 pound green beans, trimmed
- 2 pounds russet potatoes, peeled and cubed
- 4 cloves garlic, minced
- ½ cup heavy cream
- 4 tablespoons butter
- 1 cup chicken broth
- ¼ cup fresh parsley, chopped
steps
- 1.
Preheat the oven to 375°F. In a bowl, mix olive oil, oregano, garlic powder, salt, and pepper. Coat chicken breasts with the mixture.
- 2.
Place the chicken in a baking dish and pour chicken broth over it. Bake for 25-30 minutes or until internal temperature reaches 165°F.
- 3.
While the chicken is baking, boil the cubed potatoes in salted water until tender, about 15-20 minutes.
- 4.
Drain potatoes and return them to the pot. Add minced garlic, butter, and heavy cream. Mash until smooth and creamy. Season with salt and pepper.
- 5.
In a skillet over medium heat, sauté green beans in a little olive oil for about 5-7 minutes until tender-crisp. Season with salt and pepper.
- 6.
Once the chicken is done, let it rest for 5 minutes before slicing. Serve the chicken over a bed of mashed potatoes, topped with sautéed green beans and garnished with fresh parsley.
