Sizzling Spice Sensation

Tender chicken breast strips cooked in a flavorful black pepper sauce, served with a bed of steamed vegetables. This guilt-free version of Panda Express Black Pepper Chicken is cooked in an Instant Pot for maximum convenience and minimal calories.

- 1.5 lbs boneless, skinless chicken breasts, cut into strips
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 1/3 cup low-sodium soy sauce
- 2 tbsp hoisin sauce
- 2 tbsp rice vinegar
- 1 tbsp black pepper
- 1 tsp cornstarch
- 2 green onions, sliced (for garnish)

Set the Instant Pot to sauté mode and spray it with cooking spray. Add chicken strips and cook until browned.

In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, black pepper, minced garlic, and grated ginger.

Pour the sauce mixture into the Instant Pot and add bell peppers and onion.

Secure the lid, set the valve to the sealing position, and pressure cook on high for 5 minutes.

Once the cooking is complete, use the quick release to release the pressure.

In a separate small bowl, mix cornstarch with 1 tablespoon of water to make a slurry. Stir the slurry into the Instant Pot to thicken the sauce.
