Slow-Cooked Cheesy Beef Pasta

- 1 can (14.5 oz) diced tomatoes
- 1 can (14.5 oz) beef broth
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups uncooked pasta (such as rotini or penne)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, for garnish
