ingredients
- 1.5 lb pork loin
- 2 large onions, thinly sliced
- 1 cup BBQ sauce
- 1 cup long-grain rice
- 2 cups chicken stock
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
steps
- 1.
Preheat the oven to 375°F (190°C).
- 2.
Season the pork loin with smoked paprika, salt, and black pepper.
- 3.
In a large skillet over medium-high heat, heat olive oil. Sear the pork loin on all sides until golden brown, then transfer it to a baking dish.
- 4.
In the same skillet, add the sliced onions and cook until caramelized and golden brown.
- 5.
Spread half of the BBQ sauce over the seared pork loin.
- 6.
Add the caramelized onions on top of the pork loin.
- 7.
Pour the remaining BBQ sauce over the onions.
- 8.
Cover the baking dish with aluminum foil and roast in the preheated oven for 40-45 minutes, until the pork loin reaches an internal temperature of 145°F (63°C).
- 9.
Meanwhile, combine rice and chicken stock in a saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
- 10.
Serve the smoky BBQ pork loin over a bed of cooked rice, garnished with additional caramelized onions, if desired.
