Smoky Chipotle Pork Torta Bliss

- 2 lbs pork shoulder, boneless
- 1/4 cup chipotle in adobo sauce
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup olive oil
- 4 bolillo rolls
- 6 tomatillos, husked and halved
- 1/2 onion, sliced
- 1/4 cup cilantro, chopped
- 1 lime, juiced

In a blender, combine chipotle in adobo, garlic, cumin, smoked paprika, salt, pepper, and olive oil. Blend until smooth.

Place pork shoulder in a large bowl, pour marinade over, and coat well. Cover and refrigerate for at least 4 hours, preferably overnight.

Preheat oven to 325°F (163°C). Place marinated pork in a roasting pan and cover with foil. Roast for 3 hours until tender.

While pork is roasting, heat a skillet over medium heat. Add tomatillos and onion, cooking until charred and softened, about 8-10 minutes.

Remove from heat, blend tomatillos and onion together with lime juice and cilantro until slightly chunky; season to taste.

Once pork is done, shred it with two forks.
