Cranberry & Chipotle Mad Mead
"Recipe 1: Cranberry Chipotle Mead Ingredients: 3 lbs (1.36 kg) honey r gallon (3.78 L) water cup (240 ml) cranberry juice 1/4 cup (60 ml) lime juice 2-3 dried chipotle peppers, rehydrated and chopped tsp (5 ml) ground ginger 1/2 tsp (2.5 ml) ground cinnamon 1/4 tsp (1.25 ml) salt Red wine yeast (e.g., Lalvin K1-V1116) or mead yeast (e.g., Red Star Premier Cuvee) Instructions: Sanitize all equipment and ingredients. In a large pot, combine the honey and water. Heat the mixture over medium heat, stirring occasionally, until the honey dissolves. Remove the pot from the heat and add the cranberry juice, lime juice, chipotle peppers, ginger, cinnamon, and salt. Stir well to combine. Let the mixture cool to room temperature. Transfer the mixture to a fermentation vessel and pitch the yeast. Ferment at 65°F - 70°F (18°C 21°C) for 2-3 weeks or until the fermentation is complete. Rack the mead into a new vessel and allow it to age for at least 6 months. Bottle the mead and store it in a cool, dark place. "
