Cranberry & Chipotle Mad Mead

- 3 lbs honey
- 1 gallon water
- 1 cup cranberry juice
- 1/4 cup lime juice
- 2-3 dried chipotle peppers, rehydrated and chopped
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- Red wine yeast or mead yeast

Sanitize all equipment and ingredients thoroughly to prevent contamination.

In a large pot, combine the honey and water over medium heat, stirring until the honey is fully dissolved.

Remove the pot from heat and stir in the cranberry juice, lime juice, chopped chipotle peppers, ground ginger, ground cinnamon, and salt until well combined.

Allow the mixture to cool to room temperature for optimal yeast activation.

Transfer the cooled mixture to a fermentation vessel and gently pitch the yeast into the mixture.

Seal the fermentation vessel and ferment at a temperature range of 65°F - 70°F for about 2-3 weeks or until fermentation bubbles cease.

When fermentation is complete, rack the mead into a new vessel to clarify and allow aging for a minimum of 6 months.

Once aged, bottle the mead and store it in a cool, dark area for best results.
