ingredients
- Honey: 3 lbs
- Water: 1 gallon
- Cranberry Juice: 1 cup
- Lime Juice: 1/4 cup
- Chipotle Peppers: 2-3, count
- Ginger: 1 tsp
- Cinnamon: 1/2 tsp
- Salt: 1/4 tsp
- Red Wine Yeast or Mead Yeast: 1 packet

Sanitize all equipment and ingredients thoroughly before starting.

In a large pot, combine honey and water, heating gently until honey is completely dissolved.

Remove from heat and mix in cranberry juice, lime juice, chipotle peppers, ginger, cinnamon, and salt, stirring well to ensure all ingredients are blended.

Once fermentation is complete, rack (transfer) the mead into a new vessel for aging, avoiding sediment.

Age the mead for at least 6 months for optimal flavor development.

Finally, bottle the mead and store it in a cool, dark place to mature further.
