Smoked Pork Bone French Onion Bliss

- 4 large yellow onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon thyme, dried
- 1/2 teaspoon sugar
- 1 pound smoked pork bones
- 4 cups beef broth
- 1 cup water
- 1 cup dry white wine
- 8 slices French baguette
- 1 1/2 cups Gruyère cheese, grated
- Salt and pepper, to taste

In a large pot, melt butter and olive oil over medium heat. Add sliced onions and sugar, stirring occasionally, for about 20-25 minutes until caramelized.

Stir in smoked paprika and thyme, and cook for an additional 2-3 minutes.

Add the smoked pork bones to the pot, then pour in the white wine and simmer for 5 minutes, scraping the bottom of the pot.

Add beef broth and water, season with salt and pepper, and bring to a boil. Reduce heat and simmer for 30 minutes.

Preheat the broiler. While the soup simmers, toast the baguette slices until golden brown.

Remove the pork bones and discard or shred any meat into the soup for added flavor.

Ladle the soup into oven-safe bowls, topping each with a slice of toasted baguette and a generous amount of Gruyère cheese.

Place under the broiler for 2-3 minutes, or until the cheese is bubbly and lightly browned.

Serve hot, garnished with additional thyme if desired.
