ingredients
- 2 unbaked pie crusts (store-bought or homemade)
- 6 cups of tart apples, peeled and sliced (like Granny Smith or Honeycrisp)
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 teaspoons ground cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 2 tablespoons unsalted butter, diced
- 1 tablespoon cornstarch
- 1/2 teaspoon vanilla extract
- Sea salt to taste
- Vanilla ice cream, for serving
steps
- 1.
Preheat your smoker to 225°F. If using a charcoal smoker, add applewood chips for the best flavor.
- 2.
In a large mixing bowl, combine sliced apples, brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, cornstarch, vanilla extract, and a pinch of sea salt. Toss until well mixed.
- 3.
Pour the apple mixture into one of the pie crusts, dotting the top with diced butter.
- 4.
Cover with the second pie crust and crimp the edges. Cut several small slits in the top crust for steam to escape.
- 5.
Place the pie in the smoker and close the lid. Smoke for 2 to 2.5 hours, or until the apples are tender and the crust is golden brown.
- 6.
Remove the pie from the smoker and let it cool slightly. Serve warm slices with generous scoops of vanilla ice cream on the side.
