ingredients
- 1 lb ground beef
- 1 large carrot, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 3 fresh tomatoes, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 cups cooked brown rice
- 6 tortillas
- 1 cup shredded cheddar cheese

Preheat oven to 375°F.

In a skillet, brown beef with garlic, salt, and pepper. Drain excess fat.

Add carrots, zucchini, bell pepper, and tomatoes. Cook until veggies are tender.

Stir in cooked rice.

In a baking dish, layer tortillas, beef mixture, and cheese.

Repeat layers, ending with cheese.

Bake for 25 minutes, until cheese is melted and bubbly.
