ingredients
- 1 gallon unsweetened apple cider
- 1 stick cinnamon
- 1 tsp nutmeg (optional)
- 1 tsp cloves (optional)
- 1 tsp allspice (optional)
- 3 lbs honey
- 1 Lalvin ICV D-47 champagne yeast packet

In a large pot, heat apple cider with spices over low heat for 30 minutes.

Remove from heat, add honey, and stir until dissolved.

Let mixture cool to room temperature, sprinkle yeast on top, cover with a cloth, and let ferment for 2 weeks.

Strain mixture into bottles, seal, and age for 2 months.
