ingredients
- 1 gallon of water
- 2 cups of local honey
- 1/4 cup of fresh ginger, finely grated
- 1 large orange, zested and juiced
- 1 large lemon, zested and juiced
- 1 lime, zested and juiced
- 1/2 teaspoon of cinnamon (optional)
- 1/4 teaspoon of yeast nutrient
- 1 packet of champagne yeast
- 1 to 2 whole cloves (optional)

In a large pot, bring the water to a simmer, then remove from heat.

Stir in the honey until completely dissolved, forming a syrup.

Add the grated ginger, orange, lemon, and lime zests and juices to the mixture.
