- 8 kg honey
- 2 gallons Earl Grey tea (brewed with 100 teabags)
- 4 apples, cored & sliced
- 1 kg dried mixed fruit (sultanas, raisins, cranberries, candied citrus peel)
- 3 oranges, roughly chopped (peel included)
- 2 tablespoons ground cinnamon
- ½ tablespoon allspice
- ½ tablespoon nutmeg
- 1 teaspoon ginger
- 1 tablespoon cloves
- ½ tablespoon black peppercorns

Brew 2 gallons of Earl Grey tea using 100 teabags, steeping for 5 minutes before removing the teabags.

In a large pot, combine the brewed tea and honey over low heat, stirring until the honey dissolves completely.

Add the sliced apples, chopped oranges, and dried mixed fruit to the pot.

Sprinkle in the ground cinnamon, allspice, nutmeg, ginger, cloves, and black peppercorns, stirring well to combine.
