"Water: 1 gallon water, spring ginger, 8 oz peeled, thin-sliced, and soaked in honey cardamom seeds, green, 3 pods' worth mace, 1 tsp cinnamon, crushed, 1 stick, in a tied muslin bag cloves, crushed, 1 tsp, in a tied muslin bag; nutmeg, crushed, 1 nut, in a tied muslin bag limes, 2, thin-sliced raisins, 1 cup 10 lbs honey, generic (Sam's Club) Red Star Pasteur Champagne, 1 pkt"

Honey Spice Mead
ingredients
- 1 gallon water
- 1 cup sliced ginger
- 8 oz cardamom seeds
- 3 pods' worth of mace
- 1 tsp crushed cinnamon
- 1 stick crushed cloves
- 1 tsp crushed nutmeg
- 2 limes, thinly sliced
- 1 cup raisins
- 10 lbs honey
- 1 packet Red Star Pasteur Champagne yeast
steps
- 1.
Boil water and add ginger, cardamom, mace, cinnamon, cloves, and nutmeg in a muslin bag. Simmer for 30 minutes.
- 2.
Add limes, raisins, and honey. Stir until honey is dissolved. Let cool.
- 3.
Transfer to a large container, add yeast, cover, and let ferment for 24 hours.
- 4.
Strain mixture, bottle, and let sit for 3 days to carbonate.
- 5.
Enjoy chilled!
