ingredients
- 3 lbs raw honey
- 1 gallon water
- 2 tsp nutmeg
- 1 packet champagne yeast
- 1 cinnamon stick
- 1 whole clove

Heat water in a large pot until warm, then stir in honey until dissolved.

Add nutmeg, cinnamon stick, and clove. Simmer for 10 minutes.

Remove from heat and cool to room temperature.

Transfer mixture to a sanitized fermenting vessel. Add champagne yeast.

Seal with airlock and ferment for 4-6 weeks.

Once fermentation is complete, bottle the mead and let it age for at least 1 month before enjoying.
