- 3 lbs pale malt
- 1 lb honey malt
- 0.5 lb crystal malt (40L)
- 0.5 lb wheat malt
- 1 oz Hallertau hops (60 min)
- 1 cup chopped walnuts
- 1 cup chopped pistachios
- 0.5 oz cinnamon stick (boil for 5 min)
- 0.25 oz ground nutmeg (boil for 5 min)
- 6 lbs light honey (wildflower or clover)
- Ale yeast (English or American strain)

Heat 3.5 gallons of water to about 160°F (71°C) for mashing.

Add pale malt, honey malt, crystal malt, and wheat malt; maintain 150°F (65°C) for 60 minutes.

Sparge with additional water to collect around 6.5 gallons for boiling.

Bring wort to a boil and add Hallertau hops for 60 minutes.
- 5.
Five minutes before the boil ends, add the cinnamon stick and ground nutmeg.

Remove from heat and rapidly cool the wort to yeast pitching temperature (~70°F/21°C).
- 7.
In a sanitized fermentation vessel, combine cooled wort with chopped walnuts, pistachios, and light honey.

Pitch yeast and seal fermenter with an airlock.

Allow fermentation in a cool, dark place for 1-2 weeks.

Once fermentation is complete, bottle with priming sugar and carbonate for 2 weeks.
