Apple-Jalapeño Wine
"Recipe: Homemade Apple Wine Ingredients: 6 cups fresh apple juice (about12-14 apples) 1 cup granulated sugar 1 fresh jalapeño, sliced (adjustfor desired heat) 1 teaspoon yeast (Champagneor wine yeast recommended) 1 teaspoon lemon juice 1/4 teaspoon potassiummetabisulfite (optional, forstabilization) 1/2 teaspoon pectic enzyme(optional, for clarity) 2 cups water Directions: Combine the apple juice, sugar, jalapeño, yeast, lemon juice, potassium metabisulfite (optional), and pectic enzyme (optional) in a clean glass container. Cover the container with a cheesecloth or a clean kitchen towel and secure with a rubber band. Let the mixture ferment in a warm, dark place for 7-10 days, or until the fermentation has slowed down. Strain the wine into a clean glass container and let it age for at least 2 months before drinking."
