Oven-Roasted Spicy Asian Pork Tenderloin

- 1 ½ lb pork tenderloin
- ¼ cup soy sauce
- 2 tbsp honey
- 2 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp sesame oil
- 1 tsp red pepper flakes (adjust to taste)
- 1 green onion, sliced (for garnish)
- 1 tbsp sesame seeds (for garnish)
- Cooked jasmine rice (for serving)
- Sautéed bok choy (for serving)

Preheat your oven to 425°F.

In a bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and red pepper flakes to create the marinade.

Place the pork tenderloin in a baking dish and pour the marinade over it, ensuring it is well coated. Marinate in the refrigerator for at least 1 hour (up to overnight for more flavor).

Remove the pork from the marinade and reserve the marinade for the glaze.

Place the pork tenderloin in the preheated oven and roast for 25-30 minutes, or until the internal temperature reaches 145°F.

While the pork is roasting, pour the reserved marinade into a saucepan and bring to a boil. Reduce the heat and simmer for about 5-10 minutes until slightly thickened.

Once cooked, remove the pork from the oven and let it rest for 5 minutes before slicing.

Brush the sliced pork with the thickened glaze and garnish with green onions and sesame seeds. Serve with jasmine rice and sautéed bok choy.
