Spicy Cauliflower Rice Chicken Bowl

A flavorful blend of cauliflower rice, tender chicken, and spicy seasonings, served in a colorful bowl of goodness.

- 1 medium head of cauliflower
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 small red bell pepper, diced
- 1 small yellow bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- Fresh cilantro, for garnish

Cut the cauliflower into florets and pulse in a food processor until it resembles rice.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until no longer pink. Remove from the skillet and set aside.

In the same skillet, add the remaining olive oil and sauté the onion, bell peppers, and garlic until softened.

Stir in the cauliflower rice, cumin, paprika, chili powder, and cayenne pepper. Cook for about 5 minutes, or until the cauliflower is tender but still slightly crunchy.

Return the cooked chicken back to the skillet and mix well. Cook for an additional 2-3 minutes to allow the flavors to meld.

Remove from heat and transfer to serving bowls. Garnish with fresh cilantro.
