Cauliflower Chicken Fried Rice
ingredients
- 2 cups jasmine rice
- 2 boneless, skinless chicken breasts, diced
- 2 tablespoons sesame oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 cup diced zucchini
- 1 cup cauliflower florets
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon hoisin sauce
- 2 green onions, chopped, for garnish
- 2 tablespoons toasted sesame seeds, for garnish

Cook jasmine rice according to package instructions and set aside.

Heat one tablespoon of sesame oil in a large skillet or wok over medium heat. Cook the chicken until it's no longer pink, then remove it from the pan and set aside.

In the same pan, add the remaining tablespoon of sesame oil. Sauté the onion, garlic, carrot, zucchini, and cauliflower until tender, for about 5 minutes.

Add the cooked jasmine rice and cooked chicken to the pan. Stir to combine.

In a small bowl, whisk together the soy sauce and hoisin sauce. Pour the sauce over the rice mixture and stir well to coat everything evenly.

Cook for an additional 3-4 minutes until the cauliflower is cooked through and the flavors are well incorporated.

Remove from heat and garnish with chopped green onions and toasted sesame seeds.
