Zesty Lime Chicken Cauliflower Rice Bowl

- 1 lb ground chicken
- 1 medium cauliflower head, riced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1 jalapeño, seeds removed and diced (optional)
- 1/4 cup fresh cilantro, chopped
- 1 avocado, sliced
- Lime wedges, for serving
- 1 tablespoon lime juice

In a large skillet, heat the olive oil over medium heat. Add in the ground chicken and cook until browned and cooked through.

While the chicken is cooking, place the cauliflower florets in a food processor and pulse until it becomes a rice-like consistency.

Push the cooked chicken to one side of the skillet and add the cauliflower rice to the other side. Sprinkle garlic powder, chili powder, cumin, paprika, salt, black pepper, and lime juice over the cauliflower rice.

Mix everything together and cook for another 5-7 minutes until the cauliflower rice is tender.

In a mixing bowl, combine the diced bell pepper, cherry tomatoes, red onion, jalapeño (if using), and chopped cilantro. Toss to combine.

Divide the chicken cauliflower rice mixture into bowls. Top each bowl with a generous portion of the vegetable mixture. Garnish with avocado slices and serve with lime wedges on the side.
