Spicy Chicken Lettuce Wraps

- 1 lb ground chicken
- 1 head iceberg lettuce
- 1 red bell pepper, diced
- 1 small carrot, julienned
- 1/2 cup chopped green onions
- 2 cloves garlic, minced
- 1 tbsp low sodium soy sauce
- 1 tsp Sriracha sauce
- 1 tsp sesame oil
- 1 tsp grated ginger
- 1 tbsp vegetable oil
- Salt and pepper, to taste

Heat vegetable oil in a skillet over medium heat and sauté garlic and ginger for 1 minute.

Add ground chicken and cook until browned, breaking it up with a spoon.

Stir in soy sauce, Sriracha sauce, and sesame oil. Cook for another 2 minutes.

Season with salt and pepper to taste.

Remove from heat and set aside to cool slightly.

Gently wash and separate lettuce leaves, pat them dry.
