Spicy Chipotle Chicken Tacos

- ¼ cup chipotle peppers in adobo sauce, minced
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 8 small corn tortillas
- 1 cup shredded lettuce
- ½ cup diced tomatoes
- ½ cup diced red onion
- ½ cup chopped cilantro
- ½ cup crumbled queso fresco
- Lime wedges, for serving

In a bowl, combine minced chipotle peppers, lime juice, olive oil, garlic, cumin, chili powder, paprika, salt, and black pepper to make marinade.

Place chicken thighs in a ziplock bag and add the marinade. Seal the bag and massage to coat the chicken well. Allow it to marinate in the refrigerator for at least 1 hour, or overnight for maximum flavor.
