Spicy Citrus Prawn & Veggie Stir Fry

- 1 pound prawns, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- Zest and juice of 2 lemons
- Zest and juice of 1 lime
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon Sriracha sauce
- 2 tablespoons vegetable oil
- Salt and black pepper, to taste
- Fresh cilantro, for garnish

In a small bowl, whisk together the lemon zest and juice, lime zest and juice, soy sauce, honey, and Sriracha sauce. Set the sauce aside.

Heat the vegetable oil in a large skillet or wok over high heat.

Add the sliced bell peppers, zucchini, and onion to the hot skillet. Stir fry for 3-4 minutes until slightly tender.

Push the vegetables to one side of the skillet and add the prawns to the other side. Cook for 2 minutes, then flip the prawns and cook for another 1-2 minutes until pink and cooked through.

Stir in the minced garlic and grated ginger. Cook for an additional 30 seconds until fragrant.

Pour the prepared sauce over the stir fry and toss everything together until well coated. Season with salt and black pepper to taste.
