- 1 lb medium hot sausages, sliced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 bell pepper, chopped
- 1 can (14 oz) crushed tomatoes
- 1 cup coconut milk
- 2 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chili powder (adjust to your heat preference)
- 2 tbsp vegetable oil
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Cooked rice or naan, for serving
