- 1 tablespoon sriracha sauce
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- Salt and black pepper to taste
- 4 large flour tortillas
- 1 cup cooked rice
- 1 cup black beans, rinsed and drained
- 1 cup diced tomatoes
- 1/2 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 1/4 cup sliced pickled jalapeños
- Lime wedges, for serving
steps
- 1.
Prepare the deviled eggs: Place the eggs in a saucepan and cover with water. Bring to a boil, then remove from heat and let them sit for 10 minutes. Rinse with cold water, peel, and slice in half lengthwise. Carefully remove the yolks and transfer them to a bowl.
- 2.
In the bowl with the yolks, add mayonnaise, Dijon mustard, sriracha sauce, smoked paprika, cayenne pepper, salt, and black pepper. Mash and mix until smooth.
- 3.
Spoon the deviled egg mixture back into the egg white halves.
- 4.
Warm the tortillas according to package instructions.
- 5.
Assemble the burritos: Place a tortilla on a flat surface. Spread a quarter of the cooked rice on one side of the tortilla. Top with a quarter of the black beans, diced tomatoes, cilantro, red onion, and pickled jalapeños. Place two deviled eggs on top. Squeeze a bit of lime juice over the filling.
- 6.
Fold the sides of the tortilla inward, then roll tightly to form a burrito.
- 7.
Repeat steps 5 and 6 with the remaining tortillas and ingredients.
- 8.
Slice each burrito in half and serve with lime wedges on the side.
