Fiery Morning Fiesta
Kickstart your day with this spicy and savory breakfast burrito packed with plant-based goodness. A medley of flavors from seasoned tofu, black beans, roasted veggies, and a fiery homemade chipotle sauce. The perfect gluten-free and dairy-free morning fiesta!
ingredients
- 1 cup firm tofu, crumbled
- 1 tablespoon olive oil
- 1/2 red onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 jalapeno pepper, diced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 cup cooked black beans
- 2 large gluten-free tortillas
- Fresh cilantro, chopped (for garnish)For the Chipotle Sauce:
- 1/3 cup plain dairy-free yogurt
- 1 tablespoon lime juice
- 1 chipotle pepper in adobo sauce
- 1 clove garlic
- Salt to taste

In a skillet, heat olive oil over medium heat. Add tofu and cook until lightly browned, about 5 minutes. Remove from the skillet and set aside.

In the same skillet, add onion, bell pepper, and jalapeno pepper. Sauté until vegetables are slightly tender, approximately 5 minutes.

Return the tofu to the skillet and sprinkle with chili powder, cumin powder, smoked paprika, salt, and black pepper. Stir well to combine and cook for an additional 2 minutes.

In a blender, combine all the chipotle sauce ingredients and blend until smooth.

Warm the tortillas in a separate skillet or directly over the stovetop flame.

To assemble the burritos, spread a generous amount of chipotle sauce onto each tortilla. Spoon the tofu and vegetable mixture onto the center of the tortillas. Top with black beans and fresh cilantro.
