Hearty Protein-Packed Vegetable Stew
ingredients
- 2 cups chicken broth
- 1 cup spaghetti noodles
- 2 medium russet potatoes, peeled and diced
- 1 cup frozen green pepper
- 1 cup frozen peas
- 1 cup cauliflower florets
- 1 carrot, sliced
- 1 small red onion, diced
- 1 small white onion, diced
- 2 cloves minced garlic
- 1 shallot, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano (substitute for thyme)
- 1 teaspoon regular paprika (substitute for smoked paprika)
- ½ teaspoon cayenne pepper (adjust to taste)
- ½ pound bacon, chopped or 4 hot dogs, sliced (your choice)
- 1 avocado, sliced (for garnish)
- Salt and pepper to taste

In a medium pot, cook bacon over medium heat until crispy. If using hot dogs, add them after cooking the vegetables.

Remove the bacon and set it aside, leaving the drippings in the pot.

Heat the chicken broth in the pot until simmering and add the diced russet potatoes. Cook for about 10 minutes until tender.

Stir in the frozen green pepper, peas, cauliflower, and sliced carrot. Cook for an additional 5 minutes.

Meanwhile, cook spaghetti noodles in a separate pot according to package instructions, then drain.

In the stew, add minced garlic, shallots, red and white onion, tomato paste, oregano, regular paprika, cayenne pepper, salt, and pepper. Stir well to combine and let simmer for another 5 minutes for flavors to meld.

If using hot dogs, add them now. Return the bacon to the pot and mix gently.

Add the drained spaghetti noodles to the pot and stir gently to combine.
