A zesty blend of red lentils, garlic, and red onion stuffed into mini sweet bell peppers, then baked to perfection. These spicy bites are a party favorite!
ingredients
- 1 cup red lentils
- 8 mini sweet bell peppers
- 1 red onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Olive oil
- Fresh cilantro for garnish

Preheat oven to 375°F.

Cook lentils according to package instructions.

Cut tops off peppers, remove seeds, and set aside.

In a skillet, sauté onion and garlic in olive oil until softened.
