Kick up your udon game with this fiery vegetarian soup packed with mushrooms and tofu, perfect for a chilly evening.
ingredients
- 8 oz udon noodles
- 4 cups vegetable broth
- 1 cup sliced shiitake mushrooms
- 1 block firm tofu, cubed
- 2 tbsp soy sauce
- 1 tsp sriracha
- 1 tsp sesame oil
- 2 green onions, chopped
- Salt and pepper to taste
