These bite-sized mac and cheese balls are infused with a spicy kick! Perfect as a party appetizer or a fun twist on a classic dish.
ingredients
- 1 lb elbow macaroni
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1/2 cup diced jalapenos
- 1/2 cup breadcrumbs
- 1/2 tsp cayenne pepper
- 1/2 tsp paprika
- Salt and pepper, to taste
- Oil, for frying

Cook elbow macaroni according to package instructions. Drain and set aside.

In a large saucepan, melt butter over medium heat. Whisk in flour to create a roux. Gradually stir in milk and whisk until smooth. Add shredded cheese and continue stirring until melted. Add in diced jalapenos, cayenne pepper, paprika, salt, and pepper.

Combine cooked macaroni with cheese mixture and mix well. Let cool.

Form the mixture into bite-sized balls. Roll each ball in breadcrumbs until fully coated. Heat oil in a deep fryer or large pot. Fry each ball until golden brown.
