These flavorful power bowls are packed with protein & veggies, topped with a zesty peanut sauce.
ingredients
- 1 lb chicken breast, diced
- 1 cup quinoa
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1/4 cup peanuts, chopped
- 1/4 cup cilantro, chopped
- 1/3 cup peanut butter
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp sriracha
- 1 tsp minced garlic
- 1 tsp ginger, grated
- Olive oil
- Salt and pepper

Cook quinoa according to package instructions.
