ingredients
- 2 lobster tails (6-8 oz each)
- 2 tablespoons tequila
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 1 teaspoon agave nectar
- 1 garlic clove, minced
- 1 jalapeno, seeded and minced
- 1 tablespoon fresh cilantro, chopped
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
- Lime wedges, for serving
steps
- 1.
Preheat the grill to medium-high heat.
- 2.
In a small bowl, combine tequila, lime juice, olive oil, agave nectar, minced garlic, minced jalapeno, chopped cilantro, smoked paprika, cayenne pepper, salt, and pepper. Mix well to form a marinade.
- 3.
Using kitchen shears, cut a slit through the top of each lobster tail shell lengthwise. Gently pull the meat out and rest it on top of the shell, keeping it connected at the base.
- 4.
Place the lobster tails in a shallow dish and pour the marinade over them, ensuring they are evenly coated. Allow them to marinate for 10-15 minutes.
- 5.
Remove the lobster tails from the marinade and place them on the preheated grill, meat side down. Cook for 4-5 minutes, then flip and cook for an additional 4-5 minutes, or until the lobster meat is opaque and cooked through.
- 6.
Serve the grilled lobster tails with lime wedges on the side for an extra zing of citrus. Enjoy!
