Aromatic Spicy Coconut Noodles
ingredients
- 8 oz. rice noodles
- 2 tablespoons vegetable oil
- 1 red bell pepper, thinly sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons red curry paste
- 1 can (14 oz.) coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- Fresh basil, for garnish

Cook rice noodles according to package instructions. Drain and set aside.

In a large pan or wok, heat vegetable oil over medium-high heat.

Add garlic and ginger, stir-frying for 30 seconds until fragrant.

Toss in red bell pepper, broccoli, and carrot; cook for about 5 minutes until tender-crisp.

Stir in red curry paste, allowing it to cook for another 1-2 minutes to enhance the flavors.

Pour in coconut milk, soy sauce, lime juice, and brown sugar. Bring to a gentle simmer.
