Spicy Tomato-Onion Curry

- 3 large tomatoes, diced
- 2 medium onions, thinly sliced
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 tablespoon ginger garlic paste
- 1 cup water
- Salt to taste
- Fresh coriander leaves, for garnish
- Fresh curry leaves, for garnish

Heat the vegetable oil in a pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.

Add onions and sauté until golden brown.

Stir in the ginger garlic paste and cook for a minute until fragrant.

Add tomatoes, turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well and cook for 5 minutes.
