A zesty and flavorful take on traditional fried rice, featuring colorful veggies, succulent tofu, and a spicy kick of Schezwan sauce.
ingredients
- 2 cups cooked jasmine rice
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup snow peas
- 1 cup diced green onions
- 2 cloves garlic, minced
- 1 block extra firm tofu, pressed and cubed
- 2 tbsp vegetable oil
- 2 tbsp soy sauce
- 2 tbsp Schezwan sauce
- 1 tsp Sriracha sauce (optional)

In a large wok or frying pan, heat the vegetable oil over medium-high heat.

Add garlic and stir for 30 seconds.

Add the bell peppers and snow peas and cook for 3-5 minutes, or until they start to soften.

Add the tofu and cook for another 2-3 minutes, or until it starts to brown.

Add the cooked rice and mix well.

Add soy sauce, Schezwan sauce, and Sriracha sauce (if desired) and mix well.

Add the green onions and stir gently until everything is coated in the sauce.
