"Spicy Veggie Bratwurst Bowl"

- 4 chicken or turkey bratwursts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 3 cloves of garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup low-sodium vegetable broth
- 2 teaspoons paprika
- 1 teaspoon cumin
- ½ teaspoon cayenne pepper
- Salt and pepper to taste

Set the instant pot to sauté mode and lightly spray it with cooking oil. Brown the bratwursts on both sides for a few minutes, then remove and set aside.
