ingredients
- 1 lb baby bok choy, halved lengthwise
- 2 cups broccoli florets
- 1 cup firm tofu, cubed
- 1 medium onion, sliced
- 2 cups pre-cooked wild rice
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: Sesame seeds for garnish
steps
- 1.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- 2.
Add the cubed tofu and fry until golden and crispy on all sides, about 5-7 minutes. Remove from skillet and set aside.
- 3.
In the same skillet, add the remaining olive oil and sesame oil. Sauté the sliced onion until translucent, about 3-4 minutes.
- 4.
Add minced garlic, baby bok choy, and broccoli florets, stirring frequently for about 5 minutes, until vegetables are tender-crisp.
- 5.
Return the fried tofu to the skillet, then add the pre-cooked wild rice and soy sauce. Mix well and cook for another 2-3 minutes, allowing flavors to meld.
- 6.
Season with salt and pepper to taste. Serve hot, garnished with sesame seeds if desired.
