ingredients
- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- ½ cup unsalted butter, cold and cubed
- ¼ cup ice water
- 4 apples, thinly sliced
- 1 ½ cups strawberries, hulled and halved
- 1 cup heavy cream
- ¼ cup powdered sugar
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 2 tablespoons strawberry preserves
- Fresh mint leaves, for garnish
steps
- 1.
Preheat the oven to 375°F (190°C). In a food processor, combine the flour, sugar, and butter until crumbly. Gradually add the ice water until the dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- 2.
On a lightly floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess. Arrange the sliced apples and strawberries on top of the dough in an alternating pattern.
- 3.
In a small bowl, whisk together the heavy cream, powdered sugar, lemon zest, and vanilla extract until thickened. Pour the cream mixture over the fruit, spreading it evenly.
- 4.
Bake the tart for 30-35 minutes or until the crust is golden and the fruit is tender. Remove from the oven and let it cool for 10 minutes.
- 5.
In a microwave-safe bowl, heat the strawberry preserves until slightly liquid. Brush the preserves over the top of the tart. Allow the tart to cool completely before garnishing with fresh mint leaves.
