Strawberry Lemon Balm Mead

This refreshing Strawberry Lemon Balm Mead combines the fragrant herb lemon balm with vibrant strawberries, resulting in a delightful fermented beverage. ingredients
- 3 lbs. Honey
- 1 gal Filtered or non-chlorinated water
- 4 cups Lemon balm stems and leaves, fresh cut
- 2 lbs. Strawberries, rough-diced
- 1 bag Linden tea (or green/black tea)
- 1 Lemon, juiced and zested
- 1/2 packet of wine yeast

In a large pot, combine honey and 1 quart of water over low heat until honey dissolves completely.

Remove from heat and add the remaining water to cool down the mixture.
- 3.
Once cool, add the lemon balm, strawberries, lemon juice, and zest into the mixture.

Steep the tea bag in about 2 cups of hot water for 10 minutes, then remove and pour the tea into the mixture.

Sprinkle the wine yeast over the surface and let it sit for 10 minutes before stirring gently to combine.

Transfer the mixture to a clean fermentation vessel, ensuring to leave some space at the top for bubbling.

Seal with an airlock and let ferment for 2-4 weeks, or until bubbling stops.

After fermentation, siphon the mead into clean bottles, discarding solids.

Cap bottles and let age for at least 3 months for best flavor. Serve chilled.
